Spicy and grainy. small wheel with an intense copper-coloured rind. absolutely no acidic notes, this cheese is dry, extremely crumbly and boasts a stupendously rich flavour. the initial grainy texture of the paste gradually gives way to a creaminess and then a doughiness as you chew. an intense wheat colouring with a marked presence of protein grains, and spicy, nutty overtones that make it incredibly aromatic.
