The processing of cheese produces a whey, which when heated to a temperature of 90° forms the ricotta flakes. When cooking the whey the ricotta flakes float to the surface, after which they are removed with a slotted ladle by the cheesemaker who places them in the basket molds to drain. Our ricotta has a unique taste; it's delicious by itself, as a dessert with chocolate, honey, or jam, or used in a multitude of typical recipes. You will only find it at our store.
